Damper
(Outback Drover Bread)
2 1/2 c. self-raising flour
1 tsp. salt
1 tsp. butter
1 tsp. sugar
1 c. milk (or use 1/2 cup of powdered milk and 1 cup water.)
Preheat oven to 350 F. Mix together the dry ingredients and the butter. Add the liquid and mix well. Knead for about 5 minutes. Shape into a flattened ball, and place on a greased and floured baking sheet or in a greased and floured round cake tin (I recommend the latter, about 7 or 8" diameter, as it gives a better shape). Bake for 30 minutes. Use a dutch oven if you are cooking in an open fire, and use your experience as to cooking time.

South Pittsburgh, Tennessee, better known as "The Cornbread Capitol of the World," has an old ordinance pertaining to the cooking of this southern staple. The law declares: "Cornbread isn't cornbread unless it be made correctly. Therefore, all cornbread must be hereby made in nothing other then a cast iron skillet." Those found in violation of this ordinance are to be fined one dollar.
