2-1/2 cups sugar
3/4 cup oil
3/4 cup brown sugar
3 eggs
3/4 cups pumpkin puree
3/4 cups chopped pecans or walnuts
3-1/4 cups all purpose flour
2 tsp. baking soda
1-1/2 tsp. baking powder
1-1/2 tsp. salt
1-1/2 tsp. nutmeg
1-1/2 tsp. allspice
3/4 tsp. ground cloves
1-1/2 tsp. cinnamon
Preheat oven to 350º F. Combine first 6 ingredients and set aside. Sift together remaining dry ingredients and add to pumpkin mixture, mixing until smooth. Pour into greased and floured loaf pans. Bake for 1 hour or until top springs back when pressed down.

Whenever I need day old bread for a recipe at a moment's notice, I put the number of slices the recipe requires into my toaster. I then put the toaster at it's lowest setting, and before I know it, I have bread similar to day-old bread. It works for me.
