1 small onion, chopped
1 1/3 cup rice
1 1/3 cup water
1 can cream of mushroom soup
1 can cheddar cheese soup and 1/2 can of milk
1 1/2 to 2 cups water
1/2 stick butter
2 pkg. frozen broccoli (16 oz.)
2 cups grated Cheddar cheese*
Sauté onion in butter in skillet. Add soups milk and water. Add frozen broccoli and cook until thawed. Add rice and 1 cup cheese; mix gently. Sprinkle rest of cheese on top of casserole. Bake covered for 35-40 minutes in a 350° F oven.
Note: *You may substitute 1 jar (4 oz.) Cheez Whiz for the Cheddar if you prefer.
