6 - 7 boiled potatoes, whole
1 pt. sour cream
1 can cream of chicken soup, diluted with 1/4 cup of water
1 cup shredded cheddar cheese
1 tbsp. chopped onions or chives
1/4 cup melted butter or margarine
salt to taste
pepper to taste
garnish corn flakes
Wash and boil potatoes. Leave at a stage you can still grate. Cool and peel. Grate on a coarse part of grater. Place in buttered dipper pan. Mix together sour cream, chicken soup, and water, 1/2 cup cheese, onion or chives, salt, and pepper. Put on top of potatoes. Top with crushed corn flakes and melted butter. Sprinkle other 1/2 cup of cheese on top. Bake at 350º F. for 30 minutes. Makes 6-8 servings.
