Sauerkraut Apple Casserole
1-pound fresh kielbasa, cut into 1-inch slices
1 large onion, chopped
2 apples, peeled and quartered
1-27 oz. can sauerkraut, undrained
1-cup water
1/2 cup packed brown sugar
2 tsp. caraway seed

In a skillet, brown sausage and onion until sausage is brown and onion is tender. Drain. Stir in apples, sauerkraut, water, brown sugar and caraway seed. Transfer to a 2 1/2 qt. baking dish. Cover and bake at 350 degree for 1 hour. Garnish with parsley if desired. Yields 6-8 servings.

When cooking fresh apples for pies or sauces, the yield is about 50%.  1 pound raw = 1/2 pound cooked.
Use tart apples for apple pie.
