1 head cauliflower
1 large bunch of broccoli
5 "finger" carrots sliced (optional)
Rinse, cut and steam until done.
While these are steaming-chop 1/2 large onion and saute in butter.
Drain Broccoli/cauliflower very well. Place 1/2 of the veggies in a deep casserole dish (I sprayed with Pam)
Mix together-
The sautéed onion/butter
1 cup Mayo
8oz. bag of shredded cheese
(I used Cheddar /Monterey jack mix-but....I think straight cheddar might be better)
1 teaspoon mustard
about 1/2 teaspoon Lemon pepper
Spread this decidedly thick mixture over veggie layer.
Place the remaining veggies on top and sprinkle about 4oz. (or more) shredded Cheddar on top. Bake at 350 for about 25 minutes -go by your eyes-afterall it is cooked- we're just melting cheese and blending flavors.
