Bajan Spice Paste
1/2 cup virgin olive oil
juice of 1 lime
2 Tbsp. packed thyme leaves, roughly chopped
2 Tbsp. packed sage leaves, roughly chopped
2Tbsp packed basil leaves, roughly chopped
2 cloves garlic, peeled and roughly chopped
1 Scotch bonnet chile, seeded and minced
3 scallions, minced
2 small inner stalks celery, minced
1/2 tsp. hot paprika
1/4 tsp. ground cloves
1/4 tsp. ground mace
1/4 tsp. salt
freshly ground black pepper to taste

1. To prepare Bajan spice paste, place oil, lime juice, herbs and garlic in a blender or food processor, and blend until fairly smooth.

2. Transfer to a mixing bowl and add the chile, scallions, and celery.

3. Stir in the paprika, cloves, mace, salt, and pepper. Keep refrigerated.
