Hot Fudge Sauce
1/2 c. butter
3 oz. bitter chocolate
2 1/2 c. powdered sugar
1 1/2 c. evaporated milk
1/8 tsp. salt
1 tsp. vanilla

Melt butter with chocolate in saucepan. Add other ingredients (except vanilla) and cook 20-25 minutes over medium heat.  Mixture will slowly thicken. Add vanilla and serve over ice cream. Makes 3 cups.

No one is really quite sure how/why/when Butter Beans and Butter Peas got their names; the presumption is because of the bean's creamy yellow color.  The term 'Butter Bean' was first recorded in the early nineteenth century.
