Baked Mushroom Risotto
1 lb. large mushrooms
3 scallions, chopped
1 clove garlic, crushed
2 tbsps. oil
1 1/2 c. cooked brown rice
1 tsp. dried dill weed
pinch oregano
salt and pepper

Preheat oven to 350. Remove stems from mushrooms. Chop stems. Saute mushroom stems, scallions, and garlic in oil. Combine with the rice and add remaining ingredients. Stuff mushroom caps with rice mixture and bake covered at 350 for about 20 minutes, Serves 4-6.
