Oatmeal pancakes
1/2 c. whole wheat flour
1 1/2 c. rolled oats
1 Tbsp. baking powder
1 tsp. ground cinnamon, or more to taste
1/2 tsp. nutmeg, or more to taste (optional)
1 egg, beaten
1 Tbsp. honey
1 Tbsp. melted butter
1 1/2 c. milk
1 apple, peeled, cored, and shredded, or
1/2 c. raisins, or other fruit (optional)


Combine the dry ingredients in a bowl. Add the honey, butter, milk and fruit to the egg, then combine with the dry mixture. The batter should be fairly thick. If it seems too thick, add a bit more milk. Cook on a hot, lightly  buttered griddle.
