Eggplant Relish Vinaigrette
1 eggplant (medium)
1 egg, hard boiled.
1 green pepper
1 onion (medium)
oil
vinegar
garlic
salt
pepper
sugar
Bake eggplant until soft. Grind together the baked eggplant, egg, green pepper and onion. Add oil, vinegar and seasonings to taste. Chill. Serve cold.
I don't think America will have really made it until we have our own salad dressing. Until then we're stuck behind the French, Italians, Russians and Caesarians.
