Christmas Cranberry Salad
1/2 tablespoon of grated orange rind
1 medium orange, peeled and ground
2 cups of fresh cranberries, ground
2 tart apples, unpeeled, seeded and ground
1/3 cup of sugar
1/2 cup of chopped pecans
1/3 cup of crushed pineapple, undrained
1/3 cup of seedless red grapes, halved
One 3 ounce package of raspberry flavored gelatin
1/3 cup of whipping cream, whipped (Cool Whip)
Garnishes: Orange slices, fresh cranberries, mint sprig

Combine first 8 ingredients in a large bowl. Chill 1 hour. Prepare gelatin according to package directions. Chill until partially set. Fold whipped cream into gelatin; add to fruit mixture; stir gently. Spoon into a 7 cup compote. Chill thoroughly. Garnish, if desired. Yield: 8-10 servings
