Baby Greens And Pears Salad
3 Bartlett pears, cored and thinly sliced
8 cups baby greens
1 avocado peeled and diced
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
2 tsp. sugar
1/2 cup fresh basil, chopped
Salt and pepper to taste
Combine olive oil, lemon juice, sugar, basil and salt and pepper together in a cruet and shake well. Place baby greens, pears and avocado together in a large bowl. Just before serving, add dressing and toss.

To prevent cream from curdling when adding to coffee, use fresh cream. As cream ages, its lactic acid content increases. Acid can curdle cream. The acid in coffee, along with coffee's heat, favor curdling of cream.
