1 quart of raw cranberries
3 small oranges
3 small apples
#2 can crushed pineapple, drain & reserve juice
4 small boxes of boxes Jell-O, 2 red, 1 lemon, 1 orange
Chopped nuts
Grind together cranberries, oranges and apples (with peeling), cover with 3 1/2 cups sugar and set aside. Dissolve Jell-O with 2 cups boiling water, add juice from pineapple and enough water to make total of 4 cups of liquid, let it stand until it is consistency of syrup. Mix nuts and pineapple into fruit mixture, add Jell-O and mix well, pour into loaf pan and refrigerate.
“Non cooks think it's silly to invest two hours' work in two minutes' enjoyment; but if cooking is evanescent, well, so is the ballet.”
Julia Child (1912-2004)
Cloudberry (Rubus chamaemorus) also known as salmonberry, yellowberry, and baked apple berry, are a juicy, amber yellow relative of the raspberry. They are found in subartic regions of the north temperate zone, such as New England, Canada and Scandinavia. Cloudberries are too tart to eat out of hand, but are excellent used in preserves and liqueurs.
