Edible Rag Dolls
red and yellow food color
24 white asparagus spears
3 hard cooked eggs, peeled and halved lengthwise
6 small lettuce leaves
Alfalfa sprouts or carrot curls (optional)
30 whole cloves
2 lb. chicken salad

Combine red and yellow food color to make a warm brown color. Use to color egg halves. Turn rounded side up. Insert whole cloves across widest part of each half to form "eyes" and "mouth". Shape each doll on individual dinner plate. Place egg "head' at top of plate. Shape mounds of chicken salad into upper and lower "torso". Cut tip ends of asparagus spears into twelve 2" and twelve 4" lengths for "arms" and "legs". Tint in food color mixture. (Save remaining asparagus for other uses.) Make "hair" using alfalfa sprouts or carrot curls, if desired. Makes 6 dolls.

The guar or cluster bean is most likely native to India, where the young beans are used as a vegetable. They are also used as a livestock feed, and for producing a guar gum, which is used as a thickener and emulsifier in commercial food processing. Guar gum has almost 8 times the thickening power as cornstarch, and is used in dressings, sauces, milk products, and baking mixes. It is also used in paper manufacturing, textiles, printing, cosmetics and pharmaceuticals.
