1 lb. fresh Chinese noodles
4 scallions (or green onions), chopped
2 tsp, chili oil
2 tsp, sesame seed oil
2 Tbsp, vinegar
2 Tbsp, sugar
1 1/2 tsp. salt
1/2 tsp. black pepper (fresh ground)
1 tsp. MSG (optional)
2 fresh red peppers chopped.
Cook the noodles in boiling water for 3 minutes, then drain. Rinse them in cold water until they are cool, then set aside to drain. Make the sauce by mixing together all of the other ingredients. Heat 4 Tbsp oil in a wok. When it is hot, pour in the sauce mixture, and then the noodles. Stir well to cover the noodles with sauce, then remove and cool.
Makes 6 servings.

CHARLOTTE RUSSE: A cold dessert, similar to the original charlotte, and most likely created by Carême (1783-1833). The charlotte mold is lined with ladyfingers (usually soaked in Cognac or coffee liqueur) and filled with Bavarian Cream, chocolate mousse, coffee mousse, ice cream, or uncooked gelatin custard.
