Spinach, Mushroom & Bacon Salad
3/4 pound washed spinach
3 slices bacon, cooked crisp, drained and crumbled
5 mushrooms, sliced thin
2 scallions, minced
1/4 cup spinach salad dressing
In salad bowl, toss together all ingredients except dressing. Drizzle salad with dressing and toss well. Serves 4.
Spinach Salad Dressing:
1/4 cup lemon juice
1 large egg yolk or 1 Tbsp mayonnaise
3/4 tsp salt
1/2 tsp dry mustard
1/4 tsp black pepper
1/4 tsp sugar
1 small garlic clove, chopped
1 cup olive oil
In food processor blend all ingredients except oil until smooth and then add oil in stream, blending until emulsified. Transfer dressing to a jar and keep chilled, covered, until serving.
