1/2 c Cracked Wheat
1 c Water, Boiling
1 - Tomato, Chopped
1/2 c Fresh Parsely
2 T Lemon Juice
1/8 Tsp Garlic Powder
1/4 C Chopped Scallions, Tender green portion
1/4 C Mint, Chopped
1/2 C Garbanzo Beans, from can
Pour boiling water over cracked wheat, let stand for 1/2 hour, drain. Using paper towel in colander, press out extra water from cracked wheat. Combine remaining ingredients, mix well. Chill for 2 hours before serving. Makes 6 servings.
Note:
(2 T dried parsely may be substituted for fresh)
(1 T dried mint may be substituted for fresh)
