Cheese And Tomato Lasagna
1 lb. Italian sausage
1 lb. ground beef
2 stalks celery, chopped
2 carrots, chopped
1 large onion, chopped
2 lbs. canned Italian tomatoes
12 oz. tomato paste
10 lasagna noodles, cooked
1/2 tsp. salt
2 tsp. oregano
1/2 tsp. pepper
1 lb. mozzarella cheese, shredded
1 garlic clove
3 c. cottage cheese
2 eggs, beaten
1/2 c. parmesan cheese
2 Tbsp. parsley
Combine meat, celery, carrots, onion, garlic; cook till soft. Add tomatoes, tomato paste, salt, oregano, and pepper. Simmer. Mix together the cottage cheese, eggs, parmesan cheese and parsley. Layer meat sauce, cheese mixture, mozzarella cheese, and cooked lasagna noodles in a baking dish. Bake at 375 F for 30 minutes. 10 minutes before it is done, top with additional cheese.
