Fried Baked Yellow Squash
1 lb. yellow crook-neck squash
1 med. onion cut into strips
1 tsp. sugar
salt and pepper to taste
1 stick of margarine
Slice squash into 1/4" rounds. Place in a pot and cover with water. Boil until tender.
Drain well. Add sugar, salt and pepper to squash.
Place margarine in an ovenproof skillet. Once margarine is melted, add onions and cook just until onions are translucent. Add squash mixture to skillet and mix well with onions.
Place squash in a 400°F oven, and bake until brownish on top approx. 30 to 40 min.
