Pickled Beets
3 c. cooked or canned beets, sliced
1 Tbsp. fresh horseradish, grated (or use  4 tsp prepared horseradish)
8 whole cloves (or use  1/2 tsp caraway seed)
2 c. vinegar
1 Tbsp. brown sugar
2 tsp. salt

Layer beets in a glass or earthenware bowl, sprinkling layers with horseradish and cloves. Boil vinegar with sugar and salt 2 minutes. Pour over the beets. Cover and refrigerate for 24 hours. Makes 6 servings.
