Spiced Cauliflower
1 cauliflower
2 onions
6 Tbsp. oil
1/2 tsp. mustard seeds
1 tsp. ground ginger
1 tsp. salt
1/2 tsp. tumeric
1/2 tsp. cumin
2 Tbsp. chopped parsley
2 large tomatoes
sugar

Chop onions, then cook in oil until soft. Add mustard, ginger, salt and tumeric; cook for about 3 minutes, while stirring. Cut cauliflower in pieces, add it to spice mixture, making sure it is covered thoroughly. Skin and finely chop tomatoes, stir into mix with cumin and parsley. Add sugar to taste. Cover and cook over low heat for 10 to 15 minutes.  Stir occasionally to prevent boiling. Serves 8.
“I have had, in my time, memorable meals of scrambled eggs with fresh truffles, scrambled eggs with caviar and other glamorous things, but to me, there are few things as magnificent as scrambled eggs, pure and simple, perfectly cooked and perfectly seasoned.”
James Beard, 'On Food' (1974)
