SERVES 4
1 C. Navy or Great Northern Beans
1 C. Onion, Chopped
1 clove Garlic, Chopped
1 C. Water
1/4 C. Brown Sugar
2 T. Molasses
1 T. Vinegar
1 ea Small Bay Leaf
1/2 tsp. Dry Mustard
1/8 tsp. Black Pepper
1/8 tsp. Nutmeg
1/8 tsp. Cinnamon
1 dash Allspice
1 can can tomato sauce (8 oz)
Rinse and drain Beans. Cover with cold water, and bring to a rolling boil. Shut off heat and drain. Put into bowl with all ingredients except tomato sauce and mix. Let mixture sit overnite or 4-6 hours in refrigerator. Five hours before eating, bring mixture to rolling boil in pot. Then bring heat to low, cover and simmer for 45 min. Preheat oven to 325, place mixure in 2 quart oven proof dish and cover. Cook for two hours. Add tomato sauce, and cook for two more hours, adding water during cooking if mixture dries.
