3/4 lb. of liver - pureed
1/2 cup of cornmeal
1/2 teaspoon of salt
3/4 cup of flour
1/2 teaspoon of garlic powder (although I put more
in this batch - maybe 1/2 Tablespoon? I wanted it STINKY!!!)

Begin with liver pureed to a paste. If you have a blender rather than a food processor, remove all the veins as these will clog the blades. Thoroughly blend all the dry ingredients, then add the liver. After mixing (I have the most success mixing it by squeezing it through my fingers) you will have an EXTREMELY sticky dough (and they ain't a-kidding!) Spread the dough into a THOROUGHLY GREASED cookie sheet, jelly roll pan, or pizza pan. Using a wet spatula or the back of a strong spoon, spread the dough as thin as possible, frequently dipping the spatula in water to keep it wet. Ideally, you should spread the dough so thin that it begins to tear. (I actually used my hands rather than a spatula.) Bake at 350 degrees F for about ten minutes. It should appear about as done as cookies. Cool for 5 minutes, then cut into 2" squares with a pizza roller. (I cut the pieces MUCH smaller than 2" - I think the 2" size is or the breed ring so the handler can tear off pieces to hand to the dog. For the thin stuff, I actually used a scissors to cut the sheet into thin strips then snip the strips off into little pieces. On the thicker stuff I used the pizza roller, and cut it as much as possible while it was still warm and fairly soft.) Keeps 3 weeks refrigerated or 6 months frozen Discard any which has not been kept perfectly cool.
