1 cup of sugar
1 cup of light brown sugar
1 cup of flour
1 cup of bran
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of cinnamon
3 cups of grated carrots
1 1/2 cups of corn oil
4 eggs
2 teaspoons of vanilla extract
1 apple, cut in little pieces
Preheat oven to 325 degrees and grease a 13 by 9 inch baking pan. In a separate bowl, mix dry ingredients and then add carrots, oil, eggs, and vanilla. Beat until there are no lumps. Pour into prepared baking pans, and bake for about one hour. Check often. Remove from pan when cool. Garnish with apple slices sprinkled with brown sugar. Serve cool
